Mary’s Pumpkin Roll

This is the recipe for the holiday cakes Mary Nicodemus sold as a fundraiser for Diley Middle School’s Adopt-A-Family program.

INGREDIENTS FOR CAKE:
3 eggs, beaten
2/3 cup pumpkin
1 tsp lemon juice
1 cup sugar
3/4 cup flour
1 tsp ginger
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

1//2 cup chopped walnuts (optional)

INGREDIENTS FOR FILLING:
1 cup powdered sugar
4 Tbsp butter, softened
1 (8 oz) cream cheese
1 tsp vanilla

powdered sugar

Mix eggs and pumpkin together on high for five minutes. Add lemon juice and sugar.

Mix together the dry ingredients. Add dry ingredients to pumpkin mixture then pour into a greased and floured wax paper-lined jelly roll pan. Sprinkle with chopped nuts.

Bake 15 minutes at 350 degrees. Remove from oven. Peel off waxed paper then turn over onto tea towel covered with powdered sugar. Remove wax paper. Roll cake with towel inside.

Make the filling by creaming together the butter and cream cheese then adding the powdered sugar and vanilla. Beat until fluffy. Unroll cake, remove towel, spread with cream cheese mixture. Reroll cake then dust with powdered sugar.
